Chocolate Chip Toffee Cookies

It’s Monday! I hope you enjoyed your weekend. Are you looking forward to Thanksgiving this week? I certainly am. I have the whole week off from work, and this year I’m helping my grandmommy cook Thanksgiving dinner – first time I’ve ever been able to! I’m really looking forward to learning all her recipes!

And speaking of recipes, today I have a delicious cookie recipe for you. It’s a super simple twist on traditional chocolate chip cookies. And when I say simple, I mean it couldn’t get any simpler. You just mix up plain chocolate chip cookies, and then you chop up and add toffee candy. I used Milk Chocolate Almond Toffee from Costco – which is super scrumptious all on it’s own, as a side note – but you could use any kind of toffee you wanted.

Chocolate Chip Toffee Cookies
Makes 30 cookies


  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips
  • 1 cup chopped toffee candy
  • 1/2 cup chopped almonds (optional)


Preheat oven to 350 degrees. Cream butter, sugar and brown sugar together until smooth. Then add eggs one at a time and vanilla. In a separate bowl, mix flour, baking soda and salt. Add to the butter, sugar and egg and mix thoroughly until well combined. Mix in the chocolate chips, toffee pieces and almonds if desired. Drop by teaspoonfuls onto a greased or parchment paper lined cookie sheet. Bake for 10-12 minutes, or until cookies are golden brown. Allow to cool and enjoy! xx
