Today I have a recipe for a yummy fish and potato bake that I made a few weeks ago for dinner. Actually, it’s not quite a recipe, just an idea for an easy dinner you can make this week. Are you ready?
You need potatoes, tomatoes and any other roasting veggies you like, plus fish, olive oil and spices. That’s it!
Boil a few potatoes until they are almost completely cooked. Drain the water and slice into 1/4 inch thick circles.
Chop up some other roasting veggies. I used tomatoes, and broccoli, but cauliflower, carrots and onions would all be good additions – just make sure to use tomatoes (unless you really hate them) because they add a nice tangy sweetness to the dish.
Toss your veggies and potatoes in olive oil and spices. I used an Italian herb seasoning blend, plus salt, pepper and garlic. Spread your veggies out on a cookie sheet and roast for about 20 minutes, until tender but not completely done.
Meanwhile, defrost some fish. I prefer white fish, but you could use whatever you have on hand. Sprinkle the fish with some seasonings – a simple garlic/salt/pepper mix is really good – and when your veggies are close to being done, lay the raw fish on top and slid everything back in the oven. Continue to bake until the fish is done. For me this was another 5 – 10 minutes – my fish fillets were very thin. If you have thicker fillets that will need a longer bake time, add them on top of the veggies earlier.
When my bake came out of the oven I topped it with some fresh chopped basil and it was delicious!

ps – did you notice the purple potatoes? I got a gourmet fingerling blend from Costco … I was so geeked – I’m a little bit of a potato nut. Anyway, aren’t they fun? And, each potato actually had a slightly different flavor, which made them even more exciting.
ps again – sorry about the not so great photo – Mister was hassling me to come and eat. He is still trying to come to terms with my new and improved photo taking mania. I say new and improved because I already took tons of pictures of vacations and family events, but now I take tons of pictures of my cooking and crafts and knitting as well. Anyway, him rushing me + the dark + the steam coming off the dish = not so pretty picture. I promise it’ll be better next time :)
